Spicy Baked Broccoli
with Farmer's Daughter
Garlicky Yellow Pepper Herb Butter

This recipe awakens the flavours of fresh Ontario broccoli. An easy make-ahead meal for guests. Remove the spicy element for kids. Blanch 1 head of broccoli (flowerets and stem) in salted water; rinse in cold water and remove excess water. Place in shallow baking dish. Toss with 2 tbsp. melted
Garlicky Yellow Pepper Herb Butter to fully coat broccoli. Sprinkle 1/2 cup diced red pepper, 1/3 cup diced onion and 2 strips of bacon (cut into 1/4 inch strips) over broccoli. Season with salt and pepper to taste. Bake in 325F oven for 20 minutes. Sprinkle 1/3 cup old cheddar or smoked cheese like gouda/gruyere over top and bake at 350F for5 minutes longer. Serve immediately.
Time saver: Dish can be prepared ahead of time and baked with cheese just prior to serving.
   
Michelle's Awesome Salad

A store favourite! This salad is ultra light and fresh tasting, and is a hit with any crowd. Serve with your favourite entree or have with quiche or sandwich for lunch. Also a nice topper for pureed soup with a dollop of sour cream. Dice 3-4 sweet peppers (colourful mix), 1 avocado and 1/2 medium red onion into 1/2 inch cubes and place in a large mixing bowl. Do not mix salad until all ingredients are in bowl. Add 1 cup of Edamame beans or 1 can well-rinsed mixed bean medley. Add fresh juice from 1 lemon, 1/2 bunch chopped fresh cilantro, 1 tsp. coarse salt and 1/2 tsp. fresh pepper. Toss lightly until just mixed thoroughly. Serve with any entree. Serves 4-6.
For a sweeter flavour, substitute mango for avocado.
   
Roasted Grape Tomatoes
with Farmer's Daughter
Mediterranean Marinated Feta

This is a versatile dish that can be mixed into a leafy salad, tossed with pasta, served on fish, meat and rice. The flavours are unforgettable. Combine the following in a medium non-reactive saucepan (stainless steel or glass):1 pint (1 1/2 cups) grape or cherry tomatoes, 1/2 cup
Mediterranean Marinated Feta, 3 tbsp. balsamic vinegar, 1/2 tsp. coarse salt (increase quantity for sea salt) and 1/2 tsp. fresh pepper. Roast in 375F oven for 20 minutes, stirring every 5 minutes.
Tip: Inexpensive balsamic vinegar works well.
Salad: Can add mushrooms before roasting (optional). Toss in leafy salad with other vegetables (cucumber), add fresh lemon juice to extend quantity.
Pasta: Tosswith your favourite shape of warm, cooked pasta.
Chicken or Fish: Top on cooked chicken or fish and serve with rice.
   
Roasted Root Vegetables

It's About Lemon Thyme Herb Butter

This dish makes a quick, popular and tasty sidedish for dinner. Bake alone, surround a roast or wrap in foil and place on BBQ. Any combination of root vegetables will work. Cut 1 fennel bulb, 4 large carrots and 4 potatoes into 3" x 1/2" sticks. Cut 1 large sweet potato and 1 medium butternut squash slightly thicker as they will cook more quickly than other vegetables. Mix vegetables in roasting pan with4 tsp.chopped fresh herb medley (thyme, parsley, oregano), 1/4 cup olive oil, 2 tsp. coarse salt, 2 tsp. fresh pepper and 1/2 of a 3 oz. container of Farmer's Daughter
It's About Lemon Thyme Herb Butter. Roast at 350F for 40 minutes, stirring every 15 minutes. Mix in remaining herb butter and 4 tsp. additional chopped fresh herb medleyand bake an additional 15 minutes or until tender and caramelized.
   
Marinated Goat Cheese and Bruschetta Pizza

For those of you who can't get enough of our gourmet pizzas in the store, here's the not-so-well-kept secret. Spread Farmer's Daughter's famous Marinated Goat Cheese over flatbread (we carry wonderful freshly grilled flatbreads) and top with our Farm Fresh Bruschetta. Bake at 350° for about 10 minutes to heat through. Use this same recipe with flavoured mini flatbreads for a quick and easy appetizer or change it up and use our Roasted Vegetable Spread as the base.
